At Pasta Colombo, we grow our own ancient Senatore Cappelli wheat, stone-grind it to preserve its soul, and let it dry slowly — just as nature intended. As a family of farmers and agronomists, we've closed the circle from seed to plate to ensure that every bite is 100% organic, highly digestible, and uniquely fragrant.

There is a corner of Italy where time moves to a different beat — where fields bow to the wind and the silence carries the scent of golden wheat. This is Molise.

In the rolling hills of Rotello and the fragrant landscapes of Santa Croce di Magliano, our crops are raised with deep love and profound respect.

We take pride in cultivating Senatore Cappelli — an ancient Italian grain that rejects chemical shortcuts, requiring only patience and devotion. Our fields breathe through the rotation of chickpeas, rapeseed, protein peas, fava beans, olives, and barley. We follow ancient crop rotation practices: a natural wisdom that protects the soil and ensures a healthy, sustainable harvest every year.

A Farming Family for Generations

Guardians of Nature since 1800: this isn't a slogan — it's our life story. The Colombo family has always lived with the earth in our hearts and under our fingernails.

Our roots run deep through generations of dedication. Taking a defined shape through our grandfather's hard work, continuing with the passion of my parents, Antonio and Anna, and now finding new energy with Maria Concetta Colombo — an agronomist and daughter of the land who blends a youthful spirit with practical expertise.

After graduating in Campobasso, Maria Concetta chose to stay and cultivate her future at home. A personal challenge — her father's food intolerance — sparked a new beginning: transforming Senatore Cappelli wheat into organic, whole-wheat pasta. What started as a natural choice for the family table, shared with friends and neighbors, blossomed into a visionary business project.

Today, Pasta Colombo is an agricultural reality producing artisanal pasta and extra virgin olive oil. Our vision is clear: to close the circle, processing everything on-site to bring the vibrant, authentic soul of Molise to your table.

To us, making pasta is like telling a story. It begins in the fields, with wheat that grows at its own pace. It continues with stone-grinding — which preserves the grain's full nutritional richness — and reaches bronze-die extrusion, giving the pasta its signature texture: a roughness that holds sauce like a warm embrace.

Slow, low-temperature drying does the rest, respecting the vitamins, minerals, and the pasta's natural structure. No rush, only respect.
